Stepping up to the plate is Kirby Pucker, our rotation of brews that undergo a second fermentation with lactobacillus.
Every iteration in the series is a unique Eastlake take on postmodern American sour beer. Pucker up! After all, Lake Street Is For Lovers.

Gose with Beets and Pickling Spices - Brettanomyces was added to our house yeast culture starting with this batch. Cellaring for 6-12 months may be appropriate.

Gose with Rhubarb, Sorrel, and Basil from Garden Farme in Ramsey, MN. Cellaring for 6-12 months may be appropriate.

Kirby Pucker #10 - 08/18/16; 4.9% ABV 3.4 pH - "The Long Goodbye"
Gimlet-inspired spontaneously-fermented beer using lime zest and gin botanicals from Du Nord Craft Spirits in Minneapolis, MN. Enjoy fresh.

Kirby Pucker #12 - 10/13/16; 5.8% ABV, 3.6 pH - "Meet Your Matcha"
Brewed with matcha, whole cone Sorachi Ace, and local fresh hops - Cellaring for 6-12 months may be appropriate.

Kirby Pucker #13 - 10/28/16; 5.3% ABV, 3.4 pH - "St. Croix"
Brewed with local St. Croix wine grapes and fresh hops - Cellaring for 6-12 months may be appropriate.

Kirby Pucker #14 - 11/16/16; 7.9% ABV, 3.4 pH - "Black IPA"
Brewed with Simcoe, El Dorado, and Mosaic hops. Same rye-heavy malt bill as Nicollet Mauler. Our first 14 barrel batch of Kirby Pucker. - Cellaring for 6-12 months, or longer, may be appropriate. Expect increasingly lost hop character as the beer ages.
